For the crêpes

  • 175 ml stock (dashi)
  • 2 egg
  • 1 tsp mirin
  • 1 tsp soy sauce
  • 2-4 shrimps
  • 1 chicken thigh
  • 2-4 mushrooms (shimeji)
  • 2-4 slices carrot
  • 2-4 slices radish
  • pinch salt

Optional

  • 4 frozen peas
  • 2 tbsp daikon, soak 10 minutes if you are using dried daikon

    Prepare all the ingredients

    Whisk eggs and salt

  • 3

    Add mirin and soy sauce, mix well

  • 4

    Gradually add stock, mix well

  • 5

    Strain to remove bubbles and impurities

    Pre-heat the steamer

    Peel and devein the shrimps. Cut into smaller pieces

    Cut chicken thigh into smaller pieces

  • 9

    Peel the carrot and slice it (we need only 4 pieces)

    Slice the radish (we need only 4 pieces)

    Assemble the Chawanmushi bowls: add chicken, shrimps, mushrooms, daikon, carrots, radish and peas

    Pour egg mixture into the bowls (do not overfill them)

    Make sure the steamer is not boiling hot. Light boil/simmer is what we need. Place the bowls into the steamer and cook for 15 minutes (Cover the bowls with lids or use aluminum foil)

    Take out the bowls, check doneness with a toothpick (should be a clean stick and you should see a bit of clear liquid pouring out). Serve hot
